Who we are
Wood Fired Edibles is a mobile artisan wood fired pizza and cookery catering company based in Brooklyn and NYC. We service the Tri-State area and are vendors at America’s largest weekly outdoor food market, SMORGASBURG as well as the World Trade Center 9/11 Memorial. We have many catering clients, most notably Google, Universal Television and various movie sets/photo shoots, and have been hand picked for events including, Photoville, Movies With a View in Brooklyn Bridge Park, and the Queens Night Market.
THE PIZZA MAN
Charlie Carlotti was born in the Italian section of Brooklyn where great food traditions were practiced daily in homes and neighborhood specialty food shops. It was ingrained in him that not only quality ingredients were important, but special techniques as well. He started working in Pizzerias at the age of eleven washing dishes and helping in the kitchen. There he expressed interest in food and learning how to make pizza.This is how the obsession started.
THE DOUGH
You can’t build a home without a strong foundation, the same goes for great pizza. The dough is the foundation. We make our dough in our Brooklyn kitchen with Brooklyn water, our proprietary blend of flour, and a special fermentation/rising process that takes at least 72 hours.
THE OVENS
Custom built Pompeii mobile wood fired ovens (forno legna), built with the same construction ratios as the ovens discovered at the Pompeii ruins. Weighing 3500lbs, with a 4ft stone hearth for high volume baking, and a 3in thick insulated stone dome for heat retention, these ovens stay hot for days and take up to 2 hrs to heat up to nine hundred plus degrees. They are wood burning and the ovens are the centerpiece and main attraction of your event. We have food truck the ultimate open kitchen where your guests get to experience their food being prepared from start to finish.
